This one is my mom's cake - it is a more traditional coconut cake, she too is a huge fan of coconut cake! My mom & Adam's birthday are 1 day apart and they have the same cake preferences too, what a coincidence!
Making both of these cakes took allot of my energy to make to be honest. But I was determined to put my Kitchen Aid mixer to good use so I spread both cakes over 2 days each to make. I made the actual cakes one day each then the next day did the homemade frosting's and finished the cake then. I just can't be on my feet that long in the kitchen. My circulation in my legs is just getting worse as this pregnancy progresses, I need to take breaks and put my legs up quite a bit.

Some recent updates from this weeks doc visit - I had another growth ultrasound on Tues. the 1st and thank god everything looks FINE! He is growing accordingly and my amniotic fluid is still low but not to the level where they are going to pull the baby early.
I have had lots of frustrations at my docs office because you don't always see the same doctor (it's a large practice) and for some reason when they measure the fundal height at each appt. with the tape I am measuring way behind in weeks. Thank goodness the ultrasound is showing no need for concern, I immediately felt a like a huge weight had been lifted off my chest. So did Adam for that matter!
Right now I am 37 weeks and 5 days, and Saturday morning (yesterday) I woke up with a terrible headache. What was odd is that I never get headaches & it was only on my left side of the front of my head/left eye. It felt like I couldn't even lift my head off the pillow when I woke up. I tried to get the headache to go away with Tylenol (all you can have while preggers) and all day long I struggled with the headache. I tried so hard to be a fun host for all the guest at my house for my mom's birthday celebration & sleepover we had at our home, but I was just miserable. I started to get really worried after 2 doses of Tylenol and no signs of relief. I rested while we had guest over our house in my bedroom, and I went to bed last night thinking if this morning I still had no relief I will call the docs. They recommended I come in to get checked out but I had to go to the hospital birthing floor to do so since it was the weekend. Over the coarse of 2 hours I was given blood pressure monitoring, an NST (non stress test for the baby), blood work and a urine sample test. Everything was great with the baby and my blood work and urine was perfect, blood pressure checked out a-ok as well.
Come to find out tension headaches are very common in localized portions of the front of the head and eyes. But this was borderline migraine strength it seems. I was sent home with a script that I have now taken today 2 times and it has provided some releif but not 100%. The docs asked if I had eaten any soft cheeses or strange dairy and guess what BOTH cakes I made had buttermilk in the recipe. I never use buttermilk and it would make complete sense since my first slice of cake was Friday night. I woke up Sat. with that brutal headache! I never knew dairy cultures could trigger migraines/cluster headaches. Needless to say Adam sent everyone home from our house this morning while I was still in the hospital getting checked out with all the left over cake!
My due date is March 24th and I hope I am not visiting the birthing floor again for any other reason until then. Only a few more weeks to go!
